Sick Soup: Plant-Based Winter Recipe for Cramps or an Unsettled Stomach
Many times, when that time of month comes around, I lose all interest in movement, food, and anything that requires too much effort. If you are feeling that way, or are just feeling sick overall, this is light thin broth packed with nutrients and veggies. You can toss all of these veggies into your pressure cooker in the morning and sip on this soup all day. It has ginger, and is warming and comforting, perfect for settling your stomach. It has plenty of veggies cooked until soft so you barely have to do any work even to eat it. Set and forget it until its ready!
Ingredients:
1 heirloom tomato ( 2 medium or three smeduim) or 1 can of diced tomatoes.
1/2 sweet potato diced
A bag of cubed frozen mixed veggies
1/2 onion (you can cook whole and remove, or dice.)
1/2 block of tofu diced or cubed
1.5 tbsp garlic powder or minced garlic
1 tbsp ginger powder or minced ginger
.5 tbsp paprika
1 tbsp white wine vinegar or juice from 1/2 lemon
Salt to taste
1 tbsp Braggs aminos
1/2 onion
1 tsp cumin seeds
A pinch of turmeric
3-4 cups of water (depending on how watery you perfer your soup. )
Instructions:
If you want you could saute your veggies before you add your water and cook, but it is not crucial.
Pressure cook 30 minutes.
