Vegan Cucumber Salad Recipes
Cucumber had her 15 minutes of fame last year, but it has always been an honored guest in my meal lineup. It is cooling, hydrating, and refreshing, with a low-glycemic impact on your body. That makes it perfect for summer snacking and drink making. I will be sharing three different salad variations, along with a refreshing summer drink that's perfect for the season. Sometimes you just want an easy no-cook snack or meal, and these easy cucumber salads can satisfy that craving.

My Favorite Cucumber Salad
Cucumber
Tofu (crumbled and seasoned with chili powder, nutritional yeast, salt, and black pepper to taste)
sesame oil
Pickled Red Onions
Salt
Black Pepper
“Cheesy” Mediterranean-inspired salad
Ingredients:
1 English Cucumber (sliced into rounds)
1/4 block Tofu (cubed or crumbled and seasoned with lemon juice, nutritional yeast, black pepper, and salt)
1.5 tbsp Nutritional Yeast
Salt to taste
Black Pepper to taste
1/4 Red onion
8 grape Tomatoes halved
1 tbsp Olive oil
8 Kalamata Olives halved
1 tsp Olive liquid
Mix and enjoy!
Sesame Cucumber Salad
1 tsp Sesame oil
2 mini Cucumbers
Soy Sauce
Black pepper
(optional)Chili Oil
(optional) Sesame seeds
Creamy Chickpea Cucumber Salad
1/2 Ripe Avocado
1 tsbp Tahini
1 tbsp Soy Sauce
1/2 can of Chickpeas
Chili Powder to taste
Garlic Powder to taste
3 Mini Cucumbers, coined and quartered
1/4 Red Onion diced
Mash and mix Avocado and Tahini
Mix in chili powder, garlic powder
Mix the sauce with chopped veggies and soy sauce
Creamy Chickpea Salad
Cucumber Lemon Refresher
1 whole lemon (if you are sensitive to bitterness, peel this)
1 Mini Cucumber, or 1/2 medium cucumber
2 tbsp (or to taste) Stevia
5 cups of Water
Be sure to thoroughly clean the skin of the lemon and cucumber before starting
Blend cucumber, Lemon, and water until mostly smooth
Strain through cheesecloth
